  1. Toss the chicken pieces in seasoned cornflour, then shallow fry in a wok on a high heat for approx 5 mins, until golden and nicely crisp on the outside, and cooked throughout. Remove from the wok and set aside.
  2. Pour away (you can reserve for another time) the oil, keeping only a little for the spring onions etc. Heat again and add the garlic and spring onions, stir fry for a couple of mins, then add the cooking wine, soy sauce, sugar and la pinch of pepper. heat the sauce through, then add the chicken back into the pan.
  3. Mix well, check seasoning then serve!
