This is a gorgeous side dish for the pulled pork and is surprisingly easy to do! Yum!

  1. Preheat the oven to 220c, place the butter in a small saucepan and melt. Then pour into a loaf tin.
  2. Pour the cornmeal, flour, baking powder, salt into a large mixing bowl, Add the chilli and spring onions, and stir well.
  3. Whisk the eggs and milk together and slowly add to the dry mixture, stirring well until combined. Now pour into the loaf tin and bake for 20 mins. The cornbread will be golden brown and springy to touch. Remove from the tin, carefully and allow to cool.
