Chicken with mushroom

Chicken thighs with pancetta, peas and mushrooms in a light sauce

Ingredients

Instructions

  1. Heat 1tbsp oil in frying pan, season and dust chicken with flour then brown on all sides and remove from pan.
  2. Fry mushrooms and pancetta until softened then remove from pan.
  3. Add remaining oil and cook shallots for 5 mins before adding stock and vinegar and bubbling for 1-2 mins.
  4. Return chicken, mushroom and pancetta and cook for 15 mins.
  5. Add peas and parsley and cook for 2 more mins then serve.
