Easy peasy Chicken Noodle soup

A very healthy and quick soup. The noodles make it filling and you can add an egg for a bit of extra protein if you fancy that. I add a dash of sweet chilli sauce at the end and sometimes a splash of soy sauce too. I often use the leftover chicken pickings from a roast for this too. Good way to use it up, you can make the stock using the carcass too if you have the time, if you do then try adding a chilli to the stock to make this soup extra tasty.

  1. Heat a tbsp of oil in a large pot, then gently cook the onion and garlic, add the other vegetables and soften for approx. 5 mind, before adding the chicken and stirring well. Now add the stock and bring to the boil, add the noodles and sauce to taste, cook for a further 5-10 minutes until the noodles are soft. If you wild like to add an egg, then beat a raw egg in a bowl then add at this stage, stir well and serve immediately.
  2. Ladle into bowls and serve with a little sweet chilli sauce or fresh chilli for spice, and a garnish of fresh coriander. Delicious!
