Chicken Mushroom and Leek pie

A nice way to use up leftover chicken if you have it, of course, you can also sub with Quorn to make a vegetarian version.



  1. Preheat oven to 180c, and grease your chosen dish with butter. The gently fry your leek, and garlic in a pan, adding your mushrooms after 2 minutes. Yiou may need to add alittle extra oil at this point.
  2. Add your chicken, then add the wine and let the liquid reduce right down before adding your stock, and cream cheese. I like to add a little wholegrain mustard but that is a matter of taste! Once your sauce is a nice and creamy consistency line your dish with pastry, push down and trim the edges. Fill with your chicken mix, then cover with pastry for the topping. Brush with beaten egg or milk, then bake in the oven for approx 30 minutes, until nice and golden.
