Very simple to make and gives big results for little work

Ingredients

  1. Heat 2/3 tablespoons of water with the caster sugar in a pan until the sugar dissolves into a syrup.
  2. Add cherries and heat for another 5 to 8 minutes until the juices become a syrup.
  3. Remove from heat and cool, then add rum or cherry brandy to the mixture. 1 tbsp should be enough although add as much as you like!
  4. Place chocolate and cream in a glass bowl. Place bowl above a boiling pan on hot water. Be careful the water does not get into the bowl. Melt the chocolate and cream together until smooth.
  5. Once chocolate mixture has cooled down add egg yolks. Stir in until mixture become shiny.
  6. Spoon cherries at the bottom of six ramekin dishes. Then add chocolate mixture on top. Leave for 60 minutes to set in the fridge or a cool place.
