Cheesy Bacon Potato skins

Comfort food at it's best.



  1. Preheat your oven to 200c, and put your potatoes on a baking tray, prick them all over and sprinkle with some salt. Bake for approx 1 hour.
  2. Once your potatoes are cooked through, take them out to cool, and meanwhile get your bacon cooking under a medium grill - approx 3-4 mins each side. Also grate your cheese and set aside.
  3. Once they are cool enough to handle, cut you potatoes in half, scoop out the insides and mix in a bowl with some butter, mashing it up a little as you go. Place the skins on your baking tray.
  4. Now spoon this mix evenly between the leftover potato skins, chop your bacon into small pieces and sprinkle on the top, then sprinkle each generously with cheese. Pop these back under the grill for about 5 minutes, or in the oven for 15 mins until the cheese is all melted. Deelicious!
