Celeriac, Chicory, Pear, goats cheese and walnut salad

This is a delicious and very satisfying salad.  Very healthy too - so you can enjoy any time!

  1. First of all mix your dressing ingredients in a small pot. Now peel and slice your celeriac into thin strips (julienne). Mix 2 tbsp of your dressing with the celeriac and leave to marinade for approx 20 mins.
  2. Remove the stalks from your watercress, and separate your chicory leaves. Now drizzle the goats cheese with olive oil and sprinkle with pepper. Bake under a hot grill for approx 5 mins, it should be warm through.
  3. Core the pears and slice into small segments, add some dressing and arrange at the bottom of the salad bowl. Now add the rest of the dressing to the chicory leaves and water cress, then arrange on top of the pear.
  4. Add the celeriac, sprinkle with nuts and then top with the goats cheese - crumble on in small chunks. Enjoy - this is a delicious salad!
