A great any time soup. This is an easy one as you are very likely to have the bits and bobs in.

Instructions

  1. Heat the oil in a large pan, add the onion and garlic and fry gently, add the celery and spices. Stir well, add the carrots, stir again then add the stock, cover and simmer gently for approx 20 mins until the veg is nice and soft.
  2. Add half of the fresh coriander, then blend with a hand blender. Now serve with a sprinkle of fresh coriander and a splash of cream if you fancy!
  3. Enjoy with some crusty bread!
