This is my mum's recipe, a big favourite of mine now and when I was wee. :)



  1. Preheat your oven to 170c. Sift the flour into a mixing bowl, add caster sugar and rub in 4oz butter with your fingertips until the mixture is very fine. Press the mixture into a greased and lined 29x19cm baking tray. Bake at 170 for 30 mins until the shortbread is just coloured. Allow to cool.
  2. Heat the remaining butter and soft brown sugar together in a pan, then stir in the condensed milk, and heat gently until the sugar dissolves. Bring to the boil and stir continuously, until the caramel is a creamy fudge colour and has a nice gooey consistency. Pour this over the shortbread, and allow to cool.
  3. Now melt the chocolate in a bowl, over hot water and pour the melted chocolate over the caramel, tap the tin on a worksurface to level out the chocolate if needed. Again leave this to cool and set, then cut into fingers / squares.
