Big Tescos or Sainsbury’s sometimes have the less familiar ingredients or you can order on line from various online Mexican grocers. This is a perfect a side dish to any Mexican themed party night. I first tried real Mexican food in a brillaint restaurant in Montreal, totally understated and absolutely brilliant. Hard to track down the genuine article in the UK so why not have a try in doing it home made style.

Hard to track down the genuine article in the UK so why not have a try in doing it home made style.

Ingredients

  • 350 gram jar/tin Napolitos (cactus) drained & Rinsed
  • 400 gram tin Tomatillos (optional ) or 6 fresh ones if you are lucky enough to get hold of them
  • 1 medium Red Onion finely chopped
  • 3 medium Green Chillies more if you like things fiery
  • 1 large handful Fresh Coriander leaves picked and chopped
  • 200 grams Feta Cheese crumbled
  • 2 medium Limes juiced
  • 4 tbsp Olive Oil extra virgin
  • 3 cloves Garlic Roasted, Peeled & Chopped
  • 1 Chile Chipotle En Abodo minced
  • 1 tbsp Red Wine Vinegar
  • 1/2 tsp Salt
  • 1/2 tsp Ground Pepper
  • 4 medium Tomatoes chopped into chunks
  • 1 medium Cos Lettuce cleaned and split into 6 shells

Instructions

  1. Put the napolitos, tomatoes, tomatillos, onion, chilies, corriander in a large sald bowl and sprinkle with the cheese. In a jar mix the olive oil, chipotle, lime juice, garlic, vinegar and salt and pepper. shake vigorously to blend, Pour the dressing over the salad and toss. Then spoon an equal portion of this mixture into each of the lettuce leaf shells.
