Broccoli Pasta

Nice and simple, and easy to put together. You can use frozen broccoli too, making it a great back up meal. Enjoy!

Ingredients

  • 350 grams Pasta weight is for dried
  • 350 grams Broccoli cut into florets
  • 40 grams Butter
  • 1 small splash Olive Oil helps to prevent the butter from burning
  • 1 large Onion peeled and finely chopped
  • 2 cloves Garlic peeled and finely chopped
  • 250 ml Vegetable Stock make this quite strong

Instructions

  1. cook the pasta as per instructions, and set the broccoli either to steam or boil for approx 4 mins. Once cooked set aside, but start with step 2 whist they are cooking.
  2. Melt the butter and oil in a pot, add the onion and garlic and saute for 3 mins. Add the cooked (and drained) broccoli, stir in the stock and add the cooked and drained pasta. Heat through and stir gently. Serve with some grated parmesan for extra tastiness!!
