  1. Cut the bread into slices about 2 cm/ 3/4 of an inch thick and soak them in a bowl of water for no more than 10 minutes. Peel the cucumber, cut in half length-ways, and deseed. Thinly slice the cucumber halves. Slice the onions into fine rings. Thoroughly squeeze the water from the bread slices and tear into bite-sized pieces. Heat half the olive oil in a non-stick frying pan and saute the bread, turning it constantly. Remove from the heat and leave it to cool. Whisk together the remaining olive oil, the vinegar, salt and pepper. In a larger bowl, combine the cucumber, tomatoes, onions, toast and dressing. Wash the rocket, removing any wilted leaves or coarse stalks, and pat it dry. Line four bowls with the rocket, and arrange the bread salad on it .
