Great to use up very ripe fruit, and also to sweeten up any that is a bit tart. Keep in the fridge and enjoy! You can adapt this recipe to your own taste, but remember the sugar acts as a preservative so helps it keep longer in the fridge.

  1. Put your berries in a thick bottomed pan, add sugar and water and slowly bring to the boil. Allow to simmer to a sticky, jam like consistency - approx an hour (careful not to burn it!) add more water if you need to at any point. Your jam should give the back of a wooden spoon a nice sticky coating. Enjoy with some nice home made scones!
