Beef and Guinness stew with champ potatoes

This is a great one pot dish... A perfect St Patricks day recipe.

  1. Stir fry the beef in a little oil, add the vegetables and cook until soft, then add the Guinness turning up the heat so it reduces by half. Now add the stock, and herbs and simmer on a low heat for 1 to 1 and 1/2 hours... Everything will become beautifully tender.
  2. The champ takes about 20 mins.... Boil your potatoes for 15-20 mins, until soft. Drain, and mash with the cream, butter, salt and pepper, stir in the spring onions.
  3. Serve together and enjoy. :)
