A lovely and healthy way to enjoy a tasty and sustainable fish.

  1. Preheat your oven to 180c. Place one whole trout in the centre of a large piece of baking parchment, add the slices of lemon, thyme, salt and pepper, add a splash of chilli oil then wrap up like a little parcel. Repeat with the second trout. Bake in then oven for approx 20 mins. Unwrap and enjoy with some boiled new potatoes and some seasonal veg.
