Bacon and courgette tagliatelle

This is perfect for a busy weekday, quick and tasty. Works well with spaghetti and linguine too.

  1. Cook the pasta in a large pan of boiling water according to instructions. Meanwhile, heat the oil in a pan, and cook the bacon, adding the courgette, garlic and onion after a minute or two. Cook until the veg is golden and the bacon is cooked and lightly crisp.
  2. Beat together the eggs, cream and cheese.
  3. Drain the pasta loosely so there is a little bit of water left, then return to the pan off the heat. Add the bacon and courgette mix, and then add the egg mixture and toss well together so the heat from the pasta thickens the sauce and lightly cooks the egg. I often put a lid on for a minute or two to allow it all to cook through.
  4. Divide between two bowls and serve with some black pepper.
