Moroccan spiced and roasted lamb shoulder
A variation of Grigors marinated lamb. An easy and very tasty alternative to a traditional roast. You can serve with new potatoes and seasonal veg, or with quinoa (my new favourite thing!!) and veg. The other great thing about this recipe is that you get lamb shoulder in any supermarket already deboned and butterflied (it is usually rolled up) so you can buy as big or small a piece as you like. Very versatile!!!
Try serving with some of this too – http://www.myingredients.com/recipes/yoghurt-and-mint-sauce/
Venison and chorizo casserole
This is such a delicious, warming casserole, you can easily make it into a pie, using puff pastry too. Just line a pie dish with butter, then roll out the pastry, keeping some to top the dish. Line the dish with about two thirds of the party, and fill with the casserole, top with the remaining rolled out pastry, seal the edges and prick carefully. Brush with egg and bake in the oven at 200c for about 20 minutes.
Smokehouse rub
We have bought these before as a treat, but decided to make up our own version. This is delicious sprinkled on some potato chips, or rub into meat and grill or BBQ. Easy to adapt to your own taste too, and to wrap up as gifts. This is a sweet version, but cut back the sugar and add extra spice if that is more to your taste.
Asturian white bean and chorizo broth
This is a delicious and wholesome broth which is a meal in itself. Enjoy with some crusty bread for a filling supper.
Maple Pulled Pork
This is delicious and moist. It is quite sweet, so you can adjust the ingredients to suit your own taste.
Easy peasy calamari
A big favourite at our house, and the squid should be delicious and tender not chewy or anything as it will be nice and fresh. Really quick to make and if you get squid and freeze it, it can be a quick rustle up store cupboard treat too.
I have put this in as a starter, but it can easily be a main dish too, we often make enough that it is our main meal.
Tapas style octopus with smoked paprika
This is a really simple and tasty Galician dish, just made it tonight and was amazed at how easy it is. One of my favourites when we go on holiday!
Southern sausage stew with quorn
A really delicious meal for the colder months. This is an easy one pot meal, and is a crowd pleaser!
